Ingredients
  

  • 12 oz white American cheese or melting queso blanco cubed
  • ¾ cup whole milk plus more as needed
  • 1 tablespoon butter
  • 1 tablespoon finely diced onion or garlic
  • 1 4 oz can diced green chiles, drained (optional)
  • Salt to taste
  • Pinch of cumin or black pepper optional

Method
 

  1. Melt butter in a saucepan over low heat.
  2. Add onion or garlic and cook gently until softened, about 2 minutes.
  3. Pour in milk and warm gently—do not boil.
  4. Add cheese gradually, stirring constantly until fully melted and smooth.
  5. Stir in green chiles and season lightly with salt and optional spices.
  6. Adjust thickness with additional warm milk if needed.
  7. Serve warm with tortilla chips or favorite dippers.

Notes

  • Keep heat low to prevent grainy or broken queso.
  • If queso thickens, stir in warm milk a little at a time.
  • Avoid pre-shredded cheese—they don’t melt smoothly.
  • Leftovers reheat best on the stovetop over low heat.
