  • 2 cups cooked turkey shredded
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 1 can diced tomatoes
  • 4 cups chicken or turkey broth
  • Salt to taste
  • Black pepper to taste

  • Shredded cheese or sour cream

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened.
  2. Stir in garlic and cook until fragrant. Add cumin, chili powder, and smoked paprika.
  3. Add diced tomatoes and broth, stirring to combine. Bring to a gentle simmer.
  4. Stir in shredded turkey and simmer for 20 minutes to allow flavors to develop.
  5. Season with salt and pepper to taste.
  6. Serve hot with tortilla strips and desired toppings.

Notes

  • Add tortilla strips just before serving to keep them crispy.
  • Leftover turkey works perfectly in this recipe.
  • Soup thickens slightly as it cools; add broth when reheating if needed.
