Ingredients
  

For the Sugar Cookie Base
  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¾ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
For the Frosting
  • 8 oz cream cheese softened
  • ¼ cup unsalted butter softened
  • 1 ½ cups powdered sugar
  • 1 tsp vanilla extract
For the Toppings
  • 1 cup sliced strawberries
  • 1 kiwi peeled and sliced
  • ½ cup blueberries
  • ½ cup pineapple chunks
  • ½ cup grapes halved
  • Any additional seasonal fruits you love

Method
 

  1. Preheat & Prep: Preheat the oven to 350°F (175°C). Line a pizza pan or baking sheet with parchment paper.
  2. Make the Dough: In a bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla. Gradually add flour, baking powder, and salt, mixing until a soft dough forms.
  3. Shape & Bake: Press the dough into a 12-inch circle, about ¼ inch thick. Bake for 12–15 minutes until edges are lightly golden. Cool completely on a wire rack.
  4. Prepare the Frosting: Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beating until fluffy.
  5. Frost the Cookie: Spread the frosting evenly over the cooled cookie base.
  6. Add the Fruit: Arrange sliced fruit on top in your favorite pattern—circles, rainbows, or freestyle.
  7. Chill & Serve: Refrigerate for 30 minutes before slicing. Cut into wedges and enjoy!
