Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix Wet Ingredients: In a large bowl, beat together the softened butter, cream cheese, granulated sugar, and brown sugar until light and fluffy.
Add Egg & Vanilla: Mix in the egg and vanilla extract until smooth.
Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture, stirring until just combined.
Fold in Strawberries: Gently fold in chopped strawberries or spoonfuls of strawberry preserves. Do not overmix.
Scoop & Bake: Drop dough balls onto the baking sheet using a cookie scoop. Bake for 10–12 minutes, or until edges are just golden and centers are still soft.
Cool: Let cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
