Ingredients
  

  • 500 g chicken thighs
  • 3 potatoes chopped
  • 2 carrots sliced
  • 1 onion chopped
  • 2 celery stalks
  • 3 cups chicken broth
  • 2 tbsp tomato paste
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 2 tbsp flour or cornstarch
  • Salt and pepper
  • 1 tsp thyme
  • 1 bay leaf

Method
 

  1. Add vegetables to slow cooker
  2. Place chicken on top
  3. Pour broth mixture
  4. Cook on low 6–8 hours
  5. Shred chicken and return
  6. Add thickener and cook 20 minutes
  7. Serve warm

  • Use thighs for best flavor
