Ingredients
  

  • 1 lb smoked or Italian sausage sliced
  • 1 cup long-grain white rice uncooked
  • 1 medium onion diced
  • 1 bell pepper chopped
  • 2 garlic cloves minced
  • 2 cups chicken broth
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese optional

Method
 

  1. Preheat oven to 375°F.
  2. In a skillet, brown sausage slices. Set aside.
  3. In the same skillet, sauté onion, garlic, and bell pepper until soft.
  4. Stir in uncooked rice to coat with oil and flavor.
  5. Add broth, paprika, salt, and pepper. Mix well.
  6. Pour mixture into a greased casserole dish. Layer or stir in sausage.
  7. Cover tightly with foil and bake for 55–60 minutes.
  8. Remove foil, sprinkle cheese if using, and bake uncovered for 5–10 minutes more.
  9. Let rest 5 minutes before serving.

Notes

  • For brown rice, increase liquid to 2 ½ cups and bake 75–80 minutes.
  • Add spinach, corn, or diced tomatoes for extra flavor.
  • Great for leftovers and freezer meals.
