Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • ½ cup light brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cup pumpkin purée not pie filling
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves

Method
 

  1. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add the egg, vanilla extract, and pumpkin purée. Mix until smooth.
  3. In a separate bowl, whisk flour, baking powder, baking soda, salt, and spices.
  4. Gradually add dry ingredients to the wet mixture, stirring until dough forms.
  5. Cover and chill the dough for at least 30 minutes.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop tablespoon-sized dough balls and place them 2 inches apart on the baking sheet.
  8. Bake for 10–12 minutes, until edges are set but centers look slightly soft.
  9. Let cool on the baking sheet for 5 minutes before transferring to a cooling rack.

Notes

  • For extra flavor, sprinkle cinnamon sugar on top before baking.
  • Cookies will stay fresh in an airtight container for up to 5 days.
  • You can freeze dough balls for up to 2 months and bake straight from frozen.
  • Add white chocolate chips, nuts, or a cream cheese frosting for variations.
