Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar packed
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment.
  2. Cream butter, peanut butter, and sugars until fluffy.
  3. Beat in egg and vanilla.
  4. Mix in flour, baking soda, baking powder, and salt until combined.
  5. Roll dough into 1-inch balls, place on baking sheet.
  6. Press with fork to make crisscross pattern.
  7. Bake 9–11 minutes, until edges are lightly golden.
  8. Cool on wire rack.

Notes

  • Use chunky peanut butter for extra crunch.
  • Add chocolate chips for a fun variation.
  • Store in an airtight container for up to 5 days.
