Ingredients
  

  • ½ cup unsalted butter
  • ¾ cup creamy peanut butter
  • ½ cup brown sugar packed
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 2 ½ cups old-fashioned rolled oats
  • ½ cup mini chocolate chips
  • ½ cup mini M&Ms
  • Optional: 2 tbsp honey or maple syrup for extra sweetness

Method
 

  1. Melt ingredients: In a medium saucepan, combine butter, peanut butter, and brown sugar. Heat over medium-low, stirring constantly until melted and smooth.
  2. Add flavorings: Remove from heat and stir in vanilla extract and salt.
  3. Add oats: Mix in rolled oats until fully coated with the peanut butter mixture.
  4. Cool slightly: Let the mixture cool for 5–10 minutes so the chocolate doesn’t melt too much.
  5. Fold in mix-ins: Stir in mini chocolate chips and M&Ms gently until evenly distributed.
  6. Press into pan: Line an 8×8-inch baking pan with parchment paper. Press the mixture firmly and evenly into the pan using a spatula or your hands.
  7. Chill: Refrigerate for 1 hour or until set and firm.
  8. Slice and serve: Lift from the pan using the parchment paper and cut into squares. Enjoy chilled or at room temperature!
