Melt ingredients: In a medium saucepan, combine butter, peanut butter, and brown sugar. Heat over medium-low, stirring constantly until melted and smooth.
Add flavorings: Remove from heat and stir in vanilla extract and salt.
Add oats: Mix in rolled oats until fully coated with the peanut butter mixture.
Cool slightly: Let the mixture cool for 5–10 minutes so the chocolate doesn’t melt too much.
Fold in mix-ins: Stir in mini chocolate chips and M&Ms gently until evenly distributed.
Press into pan: Line an 8×8-inch baking pan with parchment paper. Press the mixture firmly and evenly into the pan using a spatula or your hands.
Chill: Refrigerate for 1 hour or until set and firm.
Slice and serve: Lift from the pan using the parchment paper and cut into squares. Enjoy chilled or at room temperature!
