Ingredients
  

  • 2 ½ cups unsweetened shredded coconut
  • 1 can 14 oz sweetened condensed milk
  • 1 tsp vanilla extract
  • 16 whole almonds one for each bar
  • 1 ½ cups semi-sweet or dark chocolate chips
  • 1 tbsp coconut oil or butter
  • Optional: flaky sea salt or melted white chocolate for drizzle

Method
 

  1. Prepare the base: In a large bowl, mix shredded coconut, sweetened condensed milk, and vanilla extract until fully combined.
  2. Line and press: Line an 8×8-inch pan with parchment paper. Press the coconut mixture firmly and evenly into the pan to create a solid base.
  3. Add almonds: Place whole almonds evenly over the coconut layer, gently pressing them in.
  4. Melt chocolate: In a microwave-safe bowl or double boiler, melt chocolate chips and coconut oil together until smooth.
  5. Pour and spread: Pour the melted chocolate over the almonds and coconut, smoothing with a spatula to cover completely.
  6. Chill: Refrigerate for 1–2 hours, or until the chocolate is fully set.
  7. Slice: Lift the bars out using the parchment, then cut into squares or bars with a warm knife for clean edges.

Notes

  • Line your pan well to make removal and slicing easy.
  • For a darker, less sweet bar, use 70% dark chocolate.
  • You can use chopped almonds throughout for more crunch instead of whole almonds on top.
  • Store in the fridge for up to 1 week, or freeze for up to 2 months.
  • Let bars sit at room temperature for 5–10 minutes before slicing to avoid chocolate cracking.
