Method
- Mash bananas until smooth, leaving small chunks if desired.
- In a medium saucepan, combine mashed bananas, pineapple with juice, sugar, coconut, and lemon juice.
- Place over medium heat and stir until sugar dissolves.
- Bring to a gentle simmer, stirring often to prevent sticking.
- Cook for 15–20 minutes, until mixture thickens to a spreadable, jam-like consistency.
- Remove from heat and let cool completely.
- Store in clean jars or airtight containers in the refrigerator.

- Monkey Butter is not safe for shelf-stable canning; store in the fridge or freezer.
- Keeps for up to 2 weeks in the refrigerator or 2 months in the freezer.
