Monkey Butter Recipe – Tropical Banana Pineapple Spread

Ingredients
  

  • 5 ripe bananas mashed
  • 1 can 20 oz crushed pineapple with juice
  • 1 cup granulated sugar
  • 1/2 cup shredded sweetened coconut
  • 3 tbsp lemon juice
  • Optional 1/2 tsp cinnamon or nutmeg for spice

Method
 

  1. Mash bananas until smooth, leaving small chunks if desired.
  2. In a medium saucepan, combine mashed bananas, pineapple with juice, sugar, coconut, and lemon juice.
  3. Place over medium heat and stir until sugar dissolves.
  4. Bring to a gentle simmer, stirring often to prevent sticking.
  5. Cook for 15–20 minutes, until mixture thickens to a spreadable, jam-like consistency.
  6. Remove from heat and let cool completely.
  7. Store in clean jars or airtight containers in the refrigerator.

Notes

  • Monkey Butter is not safe for shelf-stable canning; store in the fridge or freezer.
  • Keeps for up to 2 weeks in the refrigerator or 2 months in the freezer.
  • Add a pinch of cinnamon, nutmeg, or cardamom for a spiced variation.
  • Use as a spread, topping, or swirl into baked goods for a tropical flavor boost.
