Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 cup whole wheat flour
  • ½ cup cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup brown sugar
  • 7 tbsp unsalted butter cold & cubed
  • cup honey
  • cup milk +1 tbsp if needed
  • 1 tsp vanilla extract

Method
 

  1. Whisk dry ingredients in a large bowl.
  2. Cut in butter until crumbly.
  3. Mix honey, milk, and vanilla; add to dry mix.
  4. Form dough, wrap, and chill for 30 min.
  5. Roll dough to ⅛ inch thick, cut into rectangles, prick with fork.
  6. Bake at 350°F (175°C) for 12–14 min. Cool completely.

Notes

  • Store up to 1 week airtight.
  • Freeze up to 2 months.
  • Maple syrup can replace honey.
  • For crispier crackers, bake slightly longer.
