Ingredients
  

  • 3 cups all-purpose flour
  • 3/4 cup brown sugar packed
  • 1/2 cup unsalted butter softened
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves

Method
 

  1. In a large bowl, cream butter and brown sugar until fluffy. Add egg and molasses; mix until smooth.
  2. In another bowl, whisk flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. Gradually add dry ingredients to wet, mixing until dough forms.
  4. Divide dough into two discs, wrap in plastic wrap, and chill for 1 hour.
  5. Preheat oven to 350°F (175°C). Roll dough to 1/4 inch on a floured surface.
  6. Cut into shapes with cookie cutters and place on lined baking sheets.
  7. Bake 8–10 minutes until edges are set.
  8. Cool on a wire rack before decorating or serving.

Notes

  • Roll thicker for softer cookies, thinner for crisp ones.
  • Dough can be made ahead and chilled up to 3 days.
  • Perfect for decorating with icing or leaving plain.
