Ingredients
  

  • 1 cup creamy peanut butter no-stir variety works best
  • ¾ cup light brown sugar packed
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup chocolate chips optional
  • Sea salt flakes for topping optional

Method
 

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and set aside.
  2. In a large mixing bowl, combine peanut butter, brown sugar, eggs, and vanilla extract. Stir until smooth and well blended.
  3. Add baking soda and salt, then mix again until fully incorporated.
  4. Fold in chocolate chips if using.
  5. Spread the batter evenly into the prepared pan. Use a spatula to smooth the top.
  6. Bake for 20–25 minutes, or until the edges are set and the center is slightly soft.
  7. Cool in the pan for 30 minutes before slicing into squares. The blondies will firm up as they cool.
  8. Optional: Sprinkle with sea salt flakes for a sweet-salty finish.

Notes

  • For extra crunch, add chopped peanuts or swirl in Nutella before baking.
  • Don’t overbake — the center should look slightly underdone for a chewy texture.
  • Store blondies in an airtight container at room temperature for up to 4 days, or freeze for up to 2 months.
  • You can use natural peanut butter, but stir it thoroughly before mixing to avoid oily spots.
  • These blondies pair perfectly with a scoop of vanilla ice cream or a drizzle of melted chocolate.
