Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and set aside.
In a large mixing bowl, combine peanut butter, brown sugar, eggs, and vanilla extract. Stir until smooth and well blended.
Add baking soda and salt, then mix again until fully incorporated.
Fold in chocolate chips if using.
Spread the batter evenly into the prepared pan. Use a spatula to smooth the top.
Bake for 20–25 minutes, or until the edges are set and the center is slightly soft.
Cool in the pan for 30 minutes before slicing into squares. The blondies will firm up as they cool.
Optional: Sprinkle with sea salt flakes for a sweet-salty finish.
