Flaky Sweet Almond Pastry

This flaky sweet almond pastry has buttery layers, rich almond filling, and an easy glaze — perfect for Brunch or dessert.

Ingredients
  

  • 1 sheet puff pastry store-bought, thawed
  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • 1 cup almond flour
  • 1 tbsp all-purpose flour
  • 1 egg
  • ½ tsp almond extract
  • Pinch of salt
  • Optional: orange zest ½ tsp
  • 1 egg for egg wash
  • ¼ cup sliced almonds
  • ½ cup powdered sugar
  • 1 –2 tbsp milk or almond extract for glaze

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a bowl, beat softened butter with sugar until creamy. Mix in almond flour, flour, egg, almond extract, salt, and zest (if using). Set aside.
  3. Roll out the puff pastry into a rectangle. Spread almond filling down the center, leaving 1–2 inches around edges.
  4. Fold or braid pastry edges over the filling. Brush with egg wash and sprinkle with sliced almonds.
  5. Bake 25–30 minutes, until golden and puffed. Let cool slightly.
  6. Mix powdered sugar with milk or almond extract to make glaze. Drizzle over cooled pastry. Slice and serve.

Notes

For extra crunch, toast the sliced almonds before topping. You can double the filling and freeze half for later
