Ingredients
  

  • 2 large eggs
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tbsp instant coffee or espresso powder
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup powdered sugar for rolling

Method
 

  1. Beat eggs and sugars until fluffy. Mix in oil, vanilla, and instant coffee.
  2. Whisk flour, cocoa, baking powder, and salt in a separate bowl.
  3. Add dry ingredients to wet and stir to form a sticky dough.
  4. Chill dough for at least 1 hour.
  5. Roll dough into balls and coat in powdered sugar.
  6. Bake at 350°F for 10–12 minutes. Cool before serving.
