Ingredients
  

  • Jumbo pasta shells
  • Shrimp peeled and deveined
  • Olive oil
  • Mushrooms sliced
  • Fresh spinach
  • Garlic minced
  • Ricotta cheese
  • Mozzarella cheese
  • Parmesan cheese
  • Italian seasoning
  • Salt & pepper
  • Alfredo sauce

Method
 

  1. Cook pasta shells until al dente; set aside.
  2. Sauté shrimp until pink; chop into small pieces.
  3. In the same pan, cook mushrooms, then add garlic and spinach until wilted.
  4. Mix shrimp, mushroom-spinach mix, ricotta, Parmesan, and mozzarella in a bowl.
  5. Stuff shells with filling and place in a greased baking dish.
  6. Cover with Alfredo sauce and extra cheese.
  7. Bake at 375°F for 20 minutes covered, then 10 minutes uncovered until bubbly.

Notes

  • Use cooked rotisserie chicken instead of shrimp for a variation.
  • Add a pinch of red pepper flakes if you like some heat.
