Method
- Add softened cream cheese to a bowl and beat until smooth.
- Stir in shredded cheddar, chopped cranberries, green onions, honey, garlic powder, salt, and pepper. Mix well.
- Chill the mixture for about 20 minutes to make rolling easier.
- Scoop small portions and roll into mini balls, about 1 inch each.
- Combine the coating cranberries and pecans in a shallow bowl.
- Roll each cheese ball in the mixture, pressing gently so it sticks.
- Arrange on a platter and serve, or refrigerate until ready to enjoy.
