Ingredients
  

  • 8 oz cream cheese softened
  • 1 cup shredded sharp cheddar cheese
  • 1/3 cup dried cranberries chopped
  • 1/4 cup green onions or chives finely sliced
  • 1 tbsp honey or maple syrup
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup dried cranberries for coating, finely chopped
  • 1/2 cup toasted pecans for coating, finely chopped

Method
 

  1. Add softened cream cheese to a bowl and beat until smooth.
  2. Stir in shredded cheddar, chopped cranberries, green onions, honey, garlic powder, salt, and pepper. Mix well.
  3. Chill the mixture for about 20 minutes to make rolling easier.
  4. Scoop small portions and roll into mini balls, about 1 inch each.
  5. Combine the coating cranberries and pecans in a shallow bowl.
  6. Roll each cheese ball in the mixture, pressing gently so it sticks.
  7. Arrange on a platter and serve, or refrigerate until ready to enjoy.
