Method
- In a large mixing bowl, combine rolled oats, cocoa powder, and a pinch of salt.
- Add peanut butter, honey (or maple syrup), and vanilla extract. Stir until a sticky dough forms.
- Fold in mini chocolate chips.
- Scoop mixture with a spoon or cookie scoop and roll into bite-sized balls.
- Place on a tray and chill in the refrigerator for at least 30 minutes until firm.
- Store in an airtight container in the fridge or freezer and enjoy!
Notes
- Use natural peanut butter with no added sugar or oils for best results.
- If the mixture feels too dry, add 1–2 tbsp extra peanut butter or honey.
- For a protein boost, add 1 scoop of chocolate or vanilla protein powder.
- These bites freeze well for up to 3 months.
