Ingredients
  

  • 1 cup rolled oats
  • ½ cup chocolate protein powder or unflavored
  • ¼ cup unsweetened cocoa powder
  • ½ cup natural peanut butter or almond butter
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • 1 –2 tbsp milk or water as needed, for consistency
  • ¼ cup mini chocolate chips optional
  • 1 tsp espresso powder optional, enhances chocolate flavor

Method
 

  1. Mix dry ingredients: In a large bowl, stir together oats, protein powder, cocoa powder, salt, and espresso powder (if using).
  2. Add wet ingredients: Stir in peanut butter, honey, and vanilla. Mix well until a thick, dough-like mixture forms.
  3. Adjust texture: If the mixture is too dry, add 1 tablespoon of milk or water at a time until it sticks together easily.
  4. Fold in mix-ins: Stir through mini chocolate chips or nuts if using.
  5. Shape balls: Scoop about 1 tablespoon of dough per ball and roll between your hands to form smooth balls.
  6. Chill: Place the balls on a tray and refrigerate for 20 minutes to firm up before serving.
