Ingredients
  

  • 1 lb ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 can 14 oz diced tomatoes
  • 1 can 8 oz tomato sauce
  • 1 can 15 oz kidney beans, drained and rinsed
  • 3 cups beef broth or chicken broth
  • 2 cups elbow macaroni uncooked
  • 2 cups shredded cheddar cheese plus more for topping

Method
 

  1. Cook pasta until just al dente, drain, and set aside.
  2. In a large pot, brown ground beef with onion and garlic until cooked through. Drain excess fat.
  3. Stir in chili powder, cumin, paprika, salt, and pepper.
  4. Add diced tomatoes, tomato sauce, beans, and broth. Simmer for 10–15 minutes.
  5. Stir in cooked pasta and mix well.
  6. Add shredded cheese and stir until melted and creamy.
  7. Top with extra cheese, cover, and let melt before serving.

Notes

  • Add jalapeños or hot sauce for extra heat.
  • Use different beans (black beans, pinto) for variety.
  • Make-ahead friendly—flavors deepen overnight.
