Ingredients
  

  • 2 cans 15 oz each chickpeas, drained and rinsed
  • 1 cucumber diced
  • 1 red bell pepper diced
  • 1 cup cherry tomatoes halved
  • 1/2 small red onion finely diced
  • 1/4 cup fresh parsley chopped
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • Salt & black pepper to taste

Method
 

  1. Drain and rinse chickpeas, then pat dry.
  2. Chop cucumber, bell pepper, tomatoes, onion, and parsley.
  3. Whisk olive oil, lemon juice, Dijon mustard, honey, salt, and pepper to make dressing.
  4. Combine chickpeas and veggies in a large bowl. Add dressing and toss gently.
  5. Chill for 20 minutes before serving for best flavor.

Notes

  • Add crumbled feta or avocado for extra creaminess.
  • Swap lemon juice for lime juice for a different twist.
