Ingredients
  

  • 2 large boneless skinless chicken breasts, sliced
  • 2 cups mushrooms button or cremini, sliced
  • 3 cups fresh spinach
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • ½ teaspoon paprika
  • ½ teaspoon Italian seasoning
  • Salt and black pepper to taste
  • ¼ cup chicken broth optional
  • 2 tablespoons heavy cream or grated Parmesan optional

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt, pepper, paprika, and Italian seasoning.
  3. Cook chicken for 4–5 minutes per side until golden and fully cooked. Remove and set aside.
  4. In the same skillet, sauté mushrooms for 4–6 minutes until browned.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Add spinach and cook until wilted.
  7. Return chicken to the skillet, add chicken broth (and cream if using), and simmer for 2–3 minutes.
  8. Adjust seasoning and serve warm.

Notes

  • For a creamy version, add cream or cream cheese at the end.
  • For low-carb diets, serve with cauliflower rice.
  • Avoid overcooking spinach to maintain color and nutrients.
  • Store leftovers in an airtight container for up to 3 days.
