Method
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt, pepper, paprika, and Italian seasoning.
- Cook chicken for 4–5 minutes per side until golden and fully cooked. Remove and set aside.
- In the same skillet, sauté mushrooms for 4–6 minutes until browned.
- Add garlic and cook for 30 seconds until fragrant.
- Add spinach and cook until wilted.
- Return chicken to the skillet, add chicken broth (and cream if using), and simmer for 2–3 minutes.
- Adjust seasoning and serve warm.
Notes
- For a creamy version, add cream or cream cheese at the end.
- For low-carb diets, serve with cauliflower rice.
- Avoid overcooking spinach to maintain color and nutrients.
- Store leftovers in an airtight container for up to 3 days.
