Ingredients
  

  • Thick-sliced brioche bread about 8 slices
  • 3 large eggs
  • ¾ cup whole milk or cream for extra richness
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon optional
  • Butter for cooking
  • Maple syrup powdered sugar, and berries (for serving)

Method
 

  1. In a mixing bowl, whisk together the eggs, milk, sugar, vanilla, and cinnamon until smooth.
  2. Heat a skillet or griddle over medium heat and melt a little butter to coat the surface.
  3. Pour the custard into a shallow dish. Dip each slice of brioche in the mixture, coating both sides briefly. Do not oversoak.
  4. Place the dipped slices on the hot skillet. Cook for 2–3 minutes per side until golden brown and slightly crisp.
  5. Transfer to plates, dust with powdered sugar, drizzle maple syrup, and add your favorite toppings. Serve warm.

Notes

  • For a crowd, you can double the recipe or keep slices warm in a 200°F (95°C) oven until serving.
  • Brioche absorbs quickly, so keep dipping short to avoid soggy toast.
  • To freeze, place cooked slices on a tray, freeze until solid, then store in a bag for up to 2 months.
