Ingredients
  

  • 1 lb breakfast sausage or bacon/ham
  • 8 large eggs
  • 2 cups milk
  • 1 package frozen shredded hash browns about 20 oz, thawed
  • 2 cups shredded cheddar cheese
  • 1 cup diced bell peppers optional
  • Salt & pepper to taste
  • Butter or spray for greasing

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13 baking dish.
  2. Cook sausage in a skillet until browned; drain fat.
  3. Layer sausage, hash browns, cheese, and veggies in baking dish.
  4. Whisk eggs, milk, salt, and pepper. Pour over casserole.
  5. Cover with foil and bake 30 minutes. Remove foil, bake 20 minutes more until set.
  6. Let rest 5 minutes before slicing and serving.

Notes

  • Make ahead: Assemble, cover, and refrigerate overnight.
  • Swap cheese varieties like mozzarella, pepper jack, or Swiss.
  • Add spinach, mushrooms, or jalapeños for extra flavor.
