Baked Zucchini Fries

These baked zucchini fries are crispy on the outside, tender on the inside, and made without deep frying. Coated in seasoned breadcrumbs and baked until golden, they’re a healthier alternative to traditional fries and perfect as a snack, side dish, or appetizer.

Ingredients
  

  • 2 medium zucchini
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • Olive oil spray or light brushing of olive oil

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or place a wire rack on top.
  2. Wash zucchini, trim ends, and cut into fry-shaped sticks. Pat dry with paper towels.
  3. In a bowl, beat the eggs. In another bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  4. Dip each zucchini stick into the egg, then coat evenly in the breadcrumb mixture.
  5. Arrange fries in a single layer on the baking sheet, leaving space between each one.
  6. Lightly spray or brush with olive oil.
  7. Bake for 10 minutes, flip fries, then bake another 10 minutes until golden and crisp.
  8. Let cool for a few minutes before serving.

Notes

  • Smaller zucchini give crispier results than large ones.
  • Do not overcrowd the pan or the fries will steam instead of crisp.
  • Best served immediately while hot and crunchy.
  • Reheat leftovers in the oven or air fryer to restore crispiness.
