Ingredients
  

  • Rolled oats
  • All-purpose flour or gluten-free 1:1 blend
  • Baking powder
  • Ground cinnamon
  • Salt
  • Coconut sugar or brown sugar
  • Egg or flax egg for vegan
  • Melted coconut oil or butter
  • Vanilla extract
  • Chopped apples
  • Optional add-ins: chopped nuts raisins, or dried cranberries

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together wet ingredients until smooth.
  3. Add dry ingredients and stir until well combined — the dough should be thick and slightly sticky.
  4. Fold in chopped apples and any mix-ins.
  5. Scoop dough onto the prepared sheet, flatten slightly, and bake for 12–15 minutes until edges are golden.
  6. Cool on a wire rack before serving.

Notes

  • For gluten-free cookies, use certified GF oats and flour.
  • For a vegan option, substitute the egg with a flax egg (1 tbsp ground flax + 3 tbsp water).
